Splicing an eye in your rope helps retrain the full strength of the rope while tying a knot will twist the rope in an unnatural way meaning you don't get the same strength it is designed for.
Here are two videos which show you how to put an eye splice into 12 strand dyneema, and how to taper down a rope that has a cover and core.
Tapers are useful where you want less weight in the rope, or where you want it to run through a system with less friction. Think spinnaker sheets hanging outside the boat in light winds, or a halyard that has to go a long way up the mast.
